Tortilla Sandwich
What is it? A mixture of the Mexican and American heritage which once fused together creates the culture I grew up with. A culture where I watched every India Maria movie, my hero was El Chapulin Colorado, I had atole for breakfast, yet at the same time I never missed an episode of Saturday Night Live, my favorite meal was mom's meatloaf and I dreamed of being in the Ramones.

Spotlight On Mexican Food: Sope

Next on my tour of Mexican cuisine, is the/el Sope, what I call the cousin of the tostada. They are similar, and very tasty.




Sope: A grilled tortilla, topped with refried beans, salsa, cheese, chopped onion, and often lettuce and meat


I have to admit, although I've had this dish only a few times, it is delicious. I don't see this on the restaurant menus here in Texas.

MMMmmmm...sopes. I think I will have some for lunch today. Feel free to stop by and have a few.

Although I must tell you that the ones I am making are vegetarian...if you bring some chorizo or carne, we can throw it on the grill and put them on the sopes.

That looks somewhat like the sopapilla I had in Las Vegas, New Mexico. It was green chile, grilled chicken, lettuce and some cheese on a sopapilla. It was yummy, but it was sooooooo spicy.

You're right - I haven't seen anything like that in Texas.
